Marco Stabile is a very young and fast emerging chef who was born in Pontedera, near Pisa, 33 years ago. Despite the young age his professional life has so far seen him behind the stoves at many different establishments and tour the region - and some of its best restaurants- since his early days either as a visiting or a resident chef. Among them, famed "Baghino" in Prato, from where he started, on to "Il Salotto del Chianti", the Antinori-owned "Osteria di Passignano", then the Beringer Blass- managed "Cavaliere del Castello di Gabbiano", through "Il Paese dei Campanelli" and "Il Chiasso dei Portici" to name a few. His feather in the cap though - before finally touching down at Ora d'Aria, where he now acts as both resident headchef and co-owner- remains the wonderful experience at "Arnolfo" (the two Michelin-starred establishment in Colle Val d'Elsa) a few years ago as the de-facto right arm to chef/owner Gaetano Trovato, unquestionably one of Italy's best.
Marco Stabile is also a visiting teacher at some of the country's most renowned schools like those in Jesi, Montecatini Terme and Arezzo (Accademia del Gusto) as well as an active fan and supporter of the prestigious "Les Jeunes Restaurateurs d'Europe", which he eagerly and successfully collaborates with.
